Flavors of the Barrio

It’s official–bar exam studying has begun.  And as expected, it is NOT fun!

I spent over two hours in a intro lecture, where I learned the basics about the format of the bar exam.  During the lecture, I munched on roasted cashews and raw almonds.

After the lecture, I was HUNGRY!  I’m not used to eating dinner so late (it was 9 PM when I got home).  With a serious lack of food in our apartment, I persuaded Josh to go to Barrio with me.

Barrio is a small Mexican/South American restaurant in Minneapolis.  It is almost always packed and is known to be a bit trendy/hip.  And if you know me, I’m not that trendy or hip :)   But I’ve always heard that their food is amazing, so I wanted to try it before we leave the city.

Barrio did not disappoint!  I started off with a blood orange margarita…

which was SUPER strong–but pretty looking!

Josh and I shared some made-to-order guacamole (I LOVE guacamole.  I could eat it every day!).

For the meal, I got some black bean and chicken tostadas with mango salsa–YUM.  It was so fresh and light–but just filling enough.

End to a perfect meal–coconut cream pie.  Josh brought some home today, and it’s one of our absolute favorite desserts.  Sorry for the dark lighting in the picture–we’ve packed up most of our lamps!

All that delicious food has made me sleepy, so I’ll catch up with you all tomorrow!  Sweet dreams, y’all!

Salsa Carrots

You want to know a secret?  I don’t really like carrots.  Honestly, I find the flavor somewhat off-putting.  But I keep buying them, because they are an easy way to get veggies and are uber-portable.

Usually, I eat my carrots with hummus or some other creamy dip to mask the carrot flavor.  With the move, my fridge is rather bare.  No hummus, no ranch, nothing.  However, there was a lonely jar of salsa in the back of the fridge, so I tried some salsa carrots for lunch!

It actually didn’t turn out too bad!  It was kind of hard to get the salsa to stick to the carrots, but otherwise it worked.  I also had 2 pieces of leftover frozen pizza and some pickles.

While I let my food digest, I went to the post office, and completed some thank you cards for graduation gifts (side note–my parents/sisters, my aunt and uncle, my grandma, and Josh’s parents are AWESOME and so generous!).

Then I completed a SWEATY workout–2 miles on the treadmill @10:47 pace (21:34) total time with 10 minutes split between my warm-up and cool-down.

Then–Jillian Michaels kicked my butt!  30 Day Shred, Level 2.  Jillian, you make me sweat (and sometimes cry).

Whew!

Now I’m at my first bar exam class–and already bored!  Good thing I brought some caffeine and snacks for the next 3 hours.
