Salsa Carrots

You want to know a secret?  I don’t really like carrots.  Honestly, I find the flavor somewhat off-putting.  But I keep buying them, because they are an easy way to get veggies and are uber-portable.

Usually, I eat my carrots with hummus or some other creamy dip to mask the carrot flavor.  With the move, my fridge is rather bare.  No hummus, no ranch, nothing.  However, there was a lonely jar of salsa in the back of the fridge, so I tried some salsa carrots for lunch!

It actually didn’t turn out too bad!  It was kind of hard to get the salsa to stick to the carrots, but otherwise it worked.  I also had 2 pieces of leftover frozen pizza and some pickles.

While I let my food digest, I went to the post office, and completed some thank you cards for graduation gifts (side note–my parents/sisters, my aunt and uncle, my grandma, and Josh’s parents are AWESOME and so generous!).

Then I completed a SWEATY workout–2 miles on the treadmill @10:47 pace (21:34) total time with 10 minutes split between my warm-up and cool-down.

Then–Jillian Michaels kicked my butt!  30 Day Shred, Level 2.  Jillian, you make me sweat (and sometimes cry).

Whew!

Now I’m at my first bar exam class–and already bored!  Good thing I brought some caffeine and snacks for the next 3 hours.

What other “dips” can I use to eat with my carrots?

Who Loves Going to the Dentist?

Not this girl :)

OK, it’s really not that bad.  My dental hygienist is a neighbor of my family, so it’s at least fun to have a friendly face and someone to chat with.

And good news–no cavities!  I actually haven’t had a cavity in probably a year and a half–maybe efforts at a healthy diet are helping out with that?

Breakfast this morning was definitely a nutritional powerhouse.  I first made a Green Monster smoothie with spinach, chia seeds, 1 banana, mixed frozen berries, and skim milk.

And to go along with it, PB&J toast–except I used almond butter and raspberry preserves instead of PB&J :)

Lunch–Lean Cuisine BBQ chicken pizza and 1 orange.

And dinner–chicken tamale and Pacific Foods Corn Chowder (one of the healthiest corn chowders I’ve ever seen!).

I added half a chopped red pepper to the soup for some added crunch and nutrition.

Today’s Workout: 30 Day Shred (more about that tomorrow!), 10 minutes on elliptical, 15 minutes on indoor bike

Which do you dread more–yearly physicals at the doctor or trips to the dentist?
